Brief Description: On a recent trip to Chicago our host invited us to sample breakfast nachos. Our response: "Breakfast nachos! Is there such a thing?" And that is how Yummy Nachos discovered the wonderful world of Chilaquiles, a beautiful merger of nachos and eggs. Why this dish is not more common in NYC is beyond us, but now we are on the hunt down. We sampled an assortment of Chilaquiles in the Windy City and many of them tried too hard to be an egg-centric dish. Kitsch'n Chicago gets it right by making their chilaquiles more nacho-y. If there is any drawback, its that the chipotle salsa does not do much to add to the dish. It'd be great if you had the option of other toppings, such as a salsa cruda or a salsa verde.
They are now available at Kitsch'n On Roscoe (2005 W. Roscoe, Chicago) with avocado, chicken, steak, or pulled pork with tequila-ranchero salsa verde!
